Basic Pancake Batter

This pancake batter is made with your basic pantry items and is extremely easy to customize.

You start this batter off by whisking together 1 &1/2 cups all purpose flour, 3 & 1/2 tsp baking powder, 1 tsp salt, and 1 Tbsp white granulated sugar.

To your dry mixture add 1 & 1/4 cups milk, 1 egg, 3 Tbsp melted butter, and 1/4 tsp vanilla extract. Mix until well combined and smooth. I use vanilla extract, but you can also use almond extract or even coconut extract to spice up this basic batter. You can also customize with fillings. Banana, chocolate chips, pecans….add whatever your favorite is.

Once your batter is mixed, use a 1/4 cup scoop to pour your batter onto your griddle, non-stick pan, cast iron pan, whatever your favorite pancake cooking surface is. Once your pancake starts to bubble, flip it and cook for another 1-2 minutes.

When my Grandma made pancakes she was always able to get a perfect, golden rim on the cake. This is the standard that my whole family now holds pancakes to. My sisters and I always get excited when we make a perfect “Grandma pancake”. My trick is using a cast iron pan, heating it over medium, and melting about 2 Tbsp of butter in the pan; I cook my pancakes right in the melted butter. This method gets me that golden rim, but nothing will ever be quite like Grandma’s.

Go ahead and set aside the instant pancake mix this weekend and try this yummy pancake batter. I bet you’ll never look at that boxed mix again.

What You Need

  • 1 & 1/2 cup all purpose flour
  • 3 & 1/2 tsp baking powder
  • 1 tsp salt
  • 1 Tbsp white granulated sugar
  • 1 & 1/4 cups milk
  • 1 egg
  • 3 Tbsp melted butter
  • 1/4 tsp vanilla extract – or your favorite extract
  • Your favorite fillings

The Steps

  1. Combine flour, baking powder, salt, and sugar in a bowl.
  2. Add milk, egg, melted butter, and extract to the dry ingredients.
  3. Mix until well combined and smooth.
  4. Add fillings if desired.
  5. Use  1/4 cup scoop to pour your cake batter and cook.
  6. Cook until golden brown on both sides.
